This recipe is straightforward, but it does require at least four hours of chilling time for the dough. Plan ahead, and you’ll be rewarded with flavorful cookies that hold their shape well. The active prep and bake time is about 35 minutes.
Why will you love Gingerbread Thumbprint Cookies?
Chilling the dough is a key step. It solidifies the butter, which prevents the cookies from spreading too much in the oven, and it allows the spice flavors to meld and deepen.
Rolling the dough balls in granulated sugar before baking creates a slightly crisp, sparkly exterior that contrasts nicely with the soft, chewy inside.
Pressing the chocolate into the cookies while they are still hot from the oven allows the base of the chocolate to melt just enough to stick firmly to the cookie as it cools.

• Molasses: Use standard unsulphured molasses for this recipe. Blackstrap molasses has a much stronger, more bitter flavor and is not recommended here.
• Spices: For the best flavor, make sure your ground ginger, cinnamon, and nutmeg are fresh and not past their expiration date.
• Brown Sugar: Either light or dark brown sugar can be used. Dark brown sugar contains more molasses and will result in a slightly deeper flavor and softer texture.
• Chocolate Kisses: Classic milk chocolate is a great choice, but feel free to experiment with dark chocolate, caramel-filled, or other flavored candy kisses.

How to Make Gingerbread Thumbprint Cookies
Step 1: Make and Chill the Dough
First, whisk together your flour and spices in one bowl. In another, cream the butter and brown sugar, then mix in the molasses, egg, and vanilla. Gradually combine the wet and dry ingredients to form a soft dough, then wrap it in plastic and chill it in the refrigerator for at least four hours.
Step 2: Shape and Bake the Cookies
Once the dough is chilled, preheat your oven to 350°F (175°C). Roll the dough into 1-inch balls, coat them in granulated sugar, and arrange them on parchment-lined baking sheets. Bake for 8 to 10 minutes until the edges are just set.

Step 3: Add the Chocolate and Drizzle
As soon as the cookies come out of the oven, gently press a chocolate kiss into the center of each one. Let them cool completely on a wire rack. While they cool, mix the confectioners’ sugar, milk, vanilla, and corn syrup to make a smooth drizzle, then apply it over the finished cookies.

What to Serve with Gingerbread Thumbprint Cookies
These cookies are wonderful on their own with a glass of cold milk or a warm mug of hot chocolate.
Helpful Tricks for Gingerbread Thumbprint Cookies
Chilling the dough is essential. It prevents the cookies from spreading too much during baking and helps develop the spice flavors.
Do not overbake the cookies. They should be soft in the center when they come out of the oven to maintain a chewy texture.
Press the chocolate candies into the cookies as soon as they come out of the oven. The heat from the cookie helps the chocolate adhere.
The vanilla drizzle is optional but adds a nice finishing touch. Adjust the thickness by adding a tiny bit more milk or confectioners’ sugar.
How to Store and Freeze Gingerbread Thumbprint Cookies
Store the cookies in an airtight container at room temperature for up to 5 days. For longer storage, you can freeze the baked cookies (before drizzling) in a freezer-safe bag or container for up to 3 months. Thaw at room temperature before serving.
Gingerbread Thumbprint Cookies Recipe FAQs
Can I skip chilling the dough?
Chilling is a necessary step for this recipe. It prevents the cookies from spreading into thin crisps while baking and ensures a thick, chewy texture. It also helps the spice flavors develop.
My cookies spread too much. What happened?
This is usually because the dough was not chilled long enough or the butter was too soft when you started. Ensure the dough is firm before you start rolling it into balls.
Can I make these cookies ahead of time?
Yes. The cookie dough can be made and refrigerated for up to 3 days or frozen for up to 3 months. You can also bake the cookies and store them in an airtight container for a few days before adding the drizzle and serving.
Gingerbread Thumbprint Cookies
Ingredients
- 3 cups all-purpose flour 360g
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3/4 cup unsalted butter softened, 170g
- 3/4 cup packed brown sugar 165g
- 1/2 cup unsulphured molasses 120ml
- 1 large egg at room temperature
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar for rolling, 50g
- 48 milk chocolate kiss-shaped candies unwrapped
- 1 cup confectioners' sugar 120g
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
- 2 teaspoons light corn syrup
Instructions
- In a large bowl, whisk together the flour, ground ginger, cinnamon, baking soda, nutmeg, and salt. Set aside.
- In a separate bowl using an electric mixer, beat the softened butter and brown sugar on medium speed until light and fluffy, about 2-3 minutes. Add the molasses, egg, and 1 teaspoon of vanilla extract and mix until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
- Shape the dough into a flat disk, wrap it tightly in plastic wrap, and refrigerate for at least 4 hours or overnight.
- When ready to bake, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Shape the chilled dough into 1-inch balls. Roll each ball in the granulated sugar to coat completely and place them 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are set and just beginning to brown. The centers will still be soft.
- Immediately press one unwrapped chocolate candy into the center of each warm cookie. The cookie will crack slightly around the edges. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- For the drizzle, whisk together the confectioners' sugar, milk, and 1/4 teaspoon of vanilla in a small bowl. Stir in the corn syrup until the mixture is smooth. Drizzle over the cooled cookies.
