The fudge comes together in about 20 minutes on the stovetop before it needs to chill. The result is a rich, sweet candy with a deep molasses and spice flavor that is a nice change from typical chocolate fudge.

Why will you love Gingerbread Fudge?

No special equipment needed: All you need is a saucepan, a spatula, and a pan. No candy thermometer required.

Quick to prepare: The active cooking time is very short. Most of the time is hands-off while the fudge sets.

Great for gifting: This fudge is sturdy, travels well, and looks lovely packed in a tin or box for the holidays.

Gingerbread Fudge Ingredients

• White Chocolate Chips: Use a good quality white chocolate for the best flavor and smoothest texture. Avoid ‘baking melts’ that contain palm oil instead of cocoa butter.

• Sweetened Condensed Milk: This is not the same as evaporated milk. It’s essential for the fudge’s creamy texture and sweetness.

• Molasses: Unsulphured molasses has a cleaner, sweeter flavor than blackstrap molasses, which can be bitter.

• Spices: Pre-ground spices work well. For a more intense flavor, you can use freshly grated nutmeg.

How to Make Gingerbread Fudge

Step 1: Melt the Base

Combine the white chocolate chips, sweetened condensed milk, molasses, and butter in a saucepan. Heat gently, stirring all the time, until everything is melted and the mixture is smooth and uniform.

Step 2: Add Flavor

Take the pan off the heat and stir in all the spices and the vanilla extract. Mix thoroughly to ensure the spices are evenly distributed throughout the fudge base.

Step 3: Pour and Chill

Pour the mixture into a parchment-lined 8×8-inch pan. Spread it evenly and then let it chill until firm, either at room temperature or for a faster set in the refrigerator.

Step 4: Cut and Decorate

Once the fudge is completely set, lift it from the pan and cut it into squares. If you like, melt a little extra white chocolate and drizzle it over the top for a final touch.

What to Serve with Gingerbread Fudge

This fudge is a wonderful sweet treat on its own. It’s also nice served with a cup of hot coffee or tea to balance the sweetness.

Helpful Tricks for Gingerbread Fudge

Stir constantly over low heat to prevent the white chocolate from seizing or burning.

Parchment paper handles make it much easier to remove the set fudge from the pan for clean cutting.

Feel free to adjust the spices to your taste. You can add a little more ginger for a spicier kick.

For the cleanest cuts, use a large, sharp knife. Wiping the blade clean between cuts also helps.

How to Store and Freeze Gingerbread Fudge

Store the fudge in an airtight container at room temperature for up to one week. You can also refrigerate it for up to two weeks. It can be frozen for up to 3 months; thaw in the refrigerator.

Gingerbread Fudge Recipe FAQs

Why is my fudge grainy?

Graininess usually happens if the mixture was overheated or cooked too quickly, causing the sugar to crystallize. Cook on low heat and stir constantly to keep it smooth.

Can I use different spices?

Yes, you can customize the spices. Pumpkin pie spice is a good substitute, or you can add a pinch of cardamom or black pepper for a different kind of warmth.

My fudge didn’t set. What went wrong?

This can happen if the ingredient ratios are off, especially if there’s too much liquid or not enough chocolate. Using sweetened condensed milk (not evaporated milk) is critical. Also, be sure to let it chill for the full time required.
