Chicken fricassee is a classic French dish that’s part sauté, part stew. Pieces of chicken are browned in butter and then gently simmered in a savory, creamy sauce, often with mushrooms and onions. It’s a wonderfully comforting one-pot meal that feels a little bit special without being complicated.

This recipe delivers a rich and flavorful dish in about an hour of cooking time. The combination of browned chicken, earthy mushrooms, and a velvety white wine cream sauce creates a satisfying dinner for any night of the week. All you need are a few simple ingredients to get started.

Why will you love Classic Chicken Fricassee?

Browning the chicken first creates a deeply flavorful foundation for the dish. The golden, crispy skin and the browned bits left in the pot are essential for a rich sauce.

Using flour to make a roux is a simple and effective technique to thicken the sauce, giving it a smooth body that coats the chicken nicely.

Finishing the sauce with cream off the heat adds richness and a velvety texture without the risk of it curdling, creating the dish’s signature creamy character.

Classic Chicken Fricassee Ingredients

• Chicken: Bone-in, skin-on chicken thighs and drumsticks provide the most flavor and moisture. You can use all thighs or a mix.

• White Wine: A dry white wine like Chardonnay, Sauvignon Blanc, or Pinot Grigio is best. It adds acidity and depth to the sauce.

• Mushrooms: Cremini (baby bella) mushrooms have a slightly deeper flavor than white button mushrooms, but either will work well.

• Heavy Cream: This is essential for the creamy finish. Do not substitute with milk or half-and-half, as they are more likely to curdle and will not provide the same richness.

• Herbs: Fresh thyme and a bay leaf infuse the sauce with a classic, aromatic flavor. If you don’t have fresh, you can use 1/2 teaspoon of dried thyme.

How to Make Classic Chicken Fricassee

Step 1: Brown the Chicken

First, season the chicken pieces and sear them in butter until the skin is golden brown. This step is key for developing a rich flavor base. Work in batches to avoid overcrowding the pot, then set the browned chicken aside.

Step 2: Build the Sauce

In the same pot, sauté the mushrooms and onions until softened. Add garlic, then sprinkle in flour to form a paste. Deglaze the pot with white wine, then whisk in chicken stock to create a smooth sauce.

Step 3: Simmer and Finish

Return the chicken to the pot, bring to a simmer, and cook partially covered until the chicken is tender and cooked through. To finish, temporarily remove the chicken, stir in heavy cream to enrich the sauce, then add the chicken back in to serve.

What to Serve with Classic Chicken Fricassee

Chicken fricassee is traditionally served over creamy mashed potatoes, fluffy rice, or egg noodles to soak up all of the delicious sauce.

Helpful Tricks for Classic Chicken Fricassee

Food Safety: Always cook chicken to a safe internal temperature of 165°F (74°C). Use a meat thermometer inserted into the thickest part of the meat, avoiding the bone.

Browning: Don’t overcrowd the pot when browning the chicken. Cooking in batches ensures the skin gets golden and crisp rather than steaming.

No Wine? If you prefer not to cook with alcohol, you can substitute the white wine with an equal amount of additional chicken stock.

Sauce Consistency: The sauce will thicken as it simmers uncovered and again after adding the cream. If it becomes too thick, stir in a splash of chicken stock until it reaches your desired consistency.

How to Store and Freeze Classic Chicken Fricassee

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as the cream sauce can separate upon thawing. Reheat gently in a pot over low heat, adding a splash of stock if needed.

Classic Chicken Fricassee Recipe FAQs

Can I use boneless, skinless chicken?

You can, but the flavor will be less rich. Use boneless, skinless thighs for best results and reduce the simmering time by about 10-15 minutes, ensuring it’s cooked to 165°F (74°C).

Can I make this dish ahead of time?

Yes, you can prepare the dish up to the point before adding the cream. When ready to serve, gently reheat the stew, then stir in the cream and parsley just before serving.

My sauce seems too thin. How can I fix it?

If the sauce is too thin after simmering, you can let it reduce for a few more minutes with the chicken removed. The sauce will also thicken slightly as it cools.

Ingredients

  • 3 to 3.5 lbs bone-in skin-on chicken pieces (thighs, drumsticks, or a mix), about 1.5 kg
  • 1 tsp kosher salt divided
  • 1/2 tsp black pepper divided
  • 4 tbsp unsalted butter 60g
  • 8 oz cremini mushrooms quartered or halved, 225g
  • 1 large yellow onion sliced
  • 2 cloves garlic minced
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 3 tbsp all-purpose flour
  • 1/2 cup dry white wine such as Chardonnay, 120ml
  • 3 cups low-sodium chicken stock 720ml
  • 3/4 cup heavy cream 180ml
  • 2 tbsp chopped fresh parsley for garnish

Instructions

  • Pat the chicken pieces dry with paper towels and season all over with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Melt the butter in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches, place the chicken skin-side down and brown for 4 to 5 minutes until golden. Flip and cook for another minute. Transfer the chicken to a plate.
  • Reduce the heat to medium. Add the mushrooms, onion, thyme, and bay leaf to the pot. Cook, stirring occasionally, for 5 to 7 minutes, until the onions have softened and the mushrooms are lightly browned.
  • Stir in the minced garlic and cook for 30 seconds until fragrant. Sprinkle the flour over the vegetables and cook, stirring constantly, for 1 minute.
  • Pour in the white wine, scraping the bottom of the pot to release any browned bits. Let it bubble and reduce for about a minute. Gradually whisk in the chicken stock until the sauce is smooth. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  • Return the chicken pieces to the pot, skin-side up. Bring the liquid to a gentle simmer, then reduce the heat to low, cover, and cook for 15 minutes.
  • Uncover the pot and continue to simmer for another 20 to 25 minutes, or until the sauce has thickened slightly and the chicken is cooked through. The internal temperature of the chicken should reach 165°F (74°C) on an instant-read thermometer.
  • Carefully remove the chicken pieces and set them aside on a plate. Remove the thyme sprigs and bay leaf. Pour the heavy cream into the sauce and stir to combine. Bring to a simmer and cook for 2 to 3 minutes until the sauce is velvety.
  • Return the chicken to the pot to rewarm. Taste the sauce and adjust seasoning if needed. Serve hot, spooning the sauce and mushrooms over the chicken, and garnish with fresh parsley.
