  • 1 cup long-grain white rice (Basmati or Jasmine) Rinse to prevent clumping.
  • 2 cups low-sodium vegetable broth Enhances flavor.
  • 2 tablespoons unsalted butter Substitute olive oil or plant-based butter for vegan options.

For the Aromatics

  • 1 medium yellow onion Chop finely.
  • 2 cloves garlic Mince prior to cooking.

For the Brightness

  • 1 medium lemon Zest and juice for nearly 2 tablespoons.

For the Herbaceous Touch

  • 1/4 cup fresh parsley Chop just before use.
  • 2 tablespoons fresh dill Use freshly chopped.
  • 2 tablespoons fresh chives Optional, add at the end.

Steps to Prepare

  • Rinse the rice under cold water until the water runs clear, then drain well.
  • Sauté the chopped onion in a pot with butter over medium heat until translucent, about 3-4 minutes.
  • Add minced garlic and the rinsed rice to the pot, toasting for 1-2 minutes until the rice turns lightly golden.
  • Pour in the vegetable broth and bring to a gentle simmer.
  • Reduce the heat, cover the pot tightly, and cook for 18-20 minutes until the rice is tender and all the liquid has been absorbed.
  • Let it rest off the heat for 5 minutes with the lid still on.
  • Fluff the rice gently with a fork, then stir in the lemon zest, juice, and chopped fresh herbs.
  • Season with salt and freshly ground black pepper to taste before serving.

Notes

Optional: Add a sprinkle of toasted nuts for an added crunch.
