  • 1/4 cup soy sauce use gluten-free soy sauce for a gluten-free version
  • 3 cloves minced garlic fresh garlic recommended
  • 1 tablespoon grated ginger use ground ginger if fresh is unavailable
  • 1/2 teaspoon black pepper adjust to taste
  • 1 tablespoon sesame oil optional, can be replaced with any cooking oil

  • 4 pieces chicken thighs bone-in thighs ensure juiciness

How to Make Instant Pot Apricot Glazed Chicken Thighs

  • In a bowl, combine apricot preserves, soy sauce, minced garlic, grated ginger, black pepper, and sesame oil. Pour this over chicken thighs in a resealable bag and refrigerate for 30 minutes to 2 hours.
  • Set your Instant Pot to 'Sauté'. Add a drizzle of oil and place marinated thighs skin-side down. Sear for 4-5 minutes until golden brown. Flip and sear for an additional 2-3 minutes.
  • Remove the chicken and add the marinade to the pot, scraping up any browned bits. Return the chicken skin-side up, close the lid, and set to 'Manual' or 'Pressure Cook' on high for 10 minutes.
  • Once cooking is complete, let the pressure release naturally for 5 minutes before venting any remaining pressure.
  • Take the chicken out, switch the Instant Pot to 'Sauté' mode, and simmer the leftover sauce until thickened. Drizzle this glaze over the chicken thighs.
  • Plate your dish warm, and enjoy it alongside rice or steamed vegetables.

Notes
