For the Filling

  • 1 can Yellowfin Tuna Oil-packed for moisture
  • 1/2 cup Greek Yogurt For creamy richness
  • 1 tbsp Dijon Mustard For tangy flavor

  • 2 stalks Green Onions Chopped for garnish

For the Peppers

Preparation

  • Preheat the Oven to 425°F (220°C).
  • Prepare the Peppers by halving them and placing cut side up in a baking dish. Bake for 15 minutes.
  • Mix the Filling by combining Greek yogurt, Dijon mustard, salt, and pepper in a bowl.
  • Fold in drained tuna, chopped celery, and most of the green onions.
  • Stuff the Peppers with the tuna mixture.
  • Top each stuffed pepper with shredded cheddar cheese.
  • Bake again for an additional 5 minutes or until cheese is melted.
  • Serve and enjoy garnished with reserved green onions.
