  • 1 tbsp Oregano dried or fresh
  • 1 tsp Salt
  • 1 tsp Black Pepper adjust to taste
  • 1 tsp Red Pepper Flakes to taste
  • 1 tbsp Lemon Zest

How to Make Baked Feta Mediterranean Bowl

  • Preheat your oven to 400°F (200°C).
  • Prepare the vegetables by dicing the red bell pepper, slicing the red onion, mincing the garlic, and chopping the tomatoes.
  • Mix the oregano, thyme, salt, black pepper, and red pepper flakes in a small bowl.
  • Distribute the diced vegetables evenly among oven-safe dishes. Crumble the feta cheese over the veggies.
  • Drizzle olive oil over the mixture.
  • Sprinkle the spice blend evenly over the dishes.
  • Bake in the oven for 25 minutes.
  • Stir the mixture to combine the melted feta and veggies, then add the spinach.
  • Create shallow wells using a spoon in the vegetable mix, and crack the eggs into these wells gently.
  • Sprinkle lemon zest over the top.
  • Return to the oven and bake for an additional 8-10 minutes.
  • Let sit for 2 minutes before serving. Garnish with fresh basil.
