Preparation Steps

  • Start by softening the chopped dates in a bowl of boiling water mixed with baking soda for about 10-15 minutes.
  • In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
  • In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Fold this dry mixture into the wet mixture until just combined, then add the mashed date mixture.
  • Preheat your oven to 350°F (175°C). Grease a baking dish, pour in the batter, and bake for 30-35 minutes until a toothpick comes out clean.
  • While the pudding is baking, combine the unsalted butter, brown sugar, heavy cream, and salt in a saucepan. Simmer for about 3-4 minutes until the sauce thickens.
  • Once the pudding is done, make holes all over the warm pudding. Pour half of the warm toffee sauce over the top.
  • Serve warm with additional sauce drizzled on top and ice cream or whipped cream.

Notes

For the ultimate indulgence, serve warm, drizzled with toffee sauce just before serving. Optionally, sprinkle sea salt for contrast.
