  • In a large bowl, beat cold, cubed butter with granulated and brown sugars until the mixture is light and fluffy, about 3-5 minutes.
  • Mix in the large egg yolk and alcohol-free vanilla extract until fully incorporated.
  • In a separate bowl, whisk together all-purpose flour and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  • Gently fold in semi-sweet chocolate chips and toffee bits until evenly distributed throughout the dough.
  • Divide the dough in half and shape each portion into a log. Wrap tightly in plastic wrap and chill in the refrigerator for at least 2 hours.
  • Preheat your oven to 350°F (175°C). Slice the logs into 1/2-inch thick rounds and arrange on a lined baking sheet.
  • Bake for 12-15 minutes or until edges are lightly golden brown. Allow cooling on the baking sheet before transferring to a wire rack.
