  • Begin by heating a generous drizzle of olive oil in a skillet over medium-high heat. You want it hot enough to make the oil shimmer.
  • Gently season the cod fillets with a sprinkle of salt and pepper to enhance their natural flavor before placing them in the skillet.
  • Carefully add the cod to the skillet and sear for about 3-5 minutes on each side. Cook until the fillets are golden brown and easily flake with a fork.
  • Once cooked to perfection, remove the cod from the skillet and set it aside on a warm plate to keep it cozy while you prepare the sauce.
  • In the same skillet, toss in minced garlic and sauté it for about 30 seconds until fragrant—watch for that golden glow!
  • Stir in the cherry tomatoes, followed by the white wine and fresh basil. Let this simmer for 3-4 minutes until the tomatoes soften and the sauce thickens slightly.
