How to Make One Pot Tomato Pasta

  • Heat the extra virgin olive oil in a large pot or deep skillet over medium heat until shimmering.
  • Add the finely diced onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic and cook for about 30 seconds until fragrant.
  • Toss in the chopped fresh tomatoes (or canned) and low-sodium stock and bring to a gentle simmer.
  • Break the spaghetti into thirds and submerge in the bubbling sauce. Cook for 10-12 minutes until al dente.
  • Once the pasta is ready, reduce heat and gently stir in the double cream, warming for 1-2 minutes.
  • Tear and mix in the fresh basil. Adjust seasoning if needed and serve immediately.
