Ingredients
  

For the Chicken

  • 4 pieces Chicken Breasts or turkey cutlets as an alternative
  • 2 tablespoons Olive Oil can replace with butter or avocado oil
  • 1 tablespoon Italian Seasoning dried herbs can be used
  • 2 cloves Garlic fresh cloves preferred, garlic powder as substitute

For the Gravy

  • 1 can Cream of Chicken Soup gluten-free version available
  • 1 cup Milk any type or dairy-free alternative
  • 1 packet Ranch Seasoning homemade version recommended
  • 1 teaspoon Onion Powder fresh onions can be used

For the Cheesy Mashed Potatoes

  • 2 pounds Russet Potatoes Yukon Gold can also be used
  • 1/2 cup Half-and-Half substitute with milk or cream
  • 4 tablespoons Butter non-dairy spreads as alternative
  • 1 cup Shredded Cheese use your favorite cheese

Seasonings

  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Preparation Steps

  • Heat olive oil in a skillet over medium heat, and season the chicken cutlets generously with Italian seasoning, salt, and pepper.
  • Cook the chicken in the skillet for 5-7 minutes on each side, until golden brown and cooked through. Remove and set aside.
  • Sauté minced garlic in the same skillet with olive oil and butter until fragrant, about 1 minute.
  • Stir in cream of chicken soup, milk, ranch seasoning, and onion powder. Heat until warmed through, about 2-3 minutes.
  • Return the cooked chicken to the skillet and simmer in the gravy for about 10 minutes.
  • Boil peeled and chopped russet potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.
  • Mash the drained potatoes with half-and-half, butter, shredded cheese, garlic powder, salt, and pepper until creamy.
  • Serve the chicken smothered in gravy over cheesy mashed potatoes.

Notes

Optional: Top with chopped fresh parsley for color.
