For the Mussels

  • 1 pound Mussels Ensure these fresh gems are alive before cooking for the best flavor and texture.

For the Curry Base

  • 1 can Coconut Milk Can be substituted with almond milk for a lighter option.
  • 1 stalk Lemongrass If unavailable, use lime zest as a substitute.
  • 2 pieces Thai Chilies Adjust according to heat tolerance or substitute with red pepper flakes.
  • 1 piece Galangal Fresh ginger can be used as a substitute.
  • 2 leaves Kaffir Lime Leaves Lime zest can replace this if necessary.

For Garnish

  • 1 bunch Thai Basil Regular basil can serve as an alternative.

Cooking Instructions

  • Rinse the mussels under cold water, using a brush if needed to remove dirt. Remove any beards and discard any that appear cracked or open.
  • In a large pot, gently heat the coconut milk over medium heat. Add the sliced lemongrass, Thai chilies, galangal, and kaffir lime leaves. Simmer for about 2-3 minutes until fragrant.
  • Carefully add the prepared mussels into the pot. Cover and steam for 5-7 minutes, or until the mussels have opened up. Discard any unopened mussels.
  • Squeeze in fresh lime juice to taste, mixing gently. Serve immediately, garnished with fresh Thai basil.

Notes

Optional: Serve with crusty bread to soak up the delicious coconut broth.
