  • Cook the penne pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
  • Heat olive oil in a skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  • Add sliced mushrooms to the skillet and cook until golden brown for about 5-7 minutes.
  • Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  • Pour in heavy cream and sprinkle grated Parmesan over the mixture. Stir and let simmer for 3-5 minutes until thickened.
  • Mix the drained pasta with the sauce, adding reserved pasta water for desired creaminess.
  • Season with salt and pepper to taste and serve immediately.

Notes

Feel free to top with additional Parmesan or fresh herbs. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
