How to Make Stuffed Dates Almond Butter

  • Begin by pitting each Medjool date. Slice open one side carefully and remove the pit, ensuring they’re ready to be filled.
  • In a mixing bowl, combine shredded coconut with a generous drizzle of almond butter. Add a touch of honey or maple syrup to create a sticky consistency, mixing well until everything is combined.
  • Carefully fill each date with the coconut mixture. For an extra surprise, press a whole almond inside each date before sealing the opening.
  • In a microwave-safe bowl, melt dark chocolate chips in 30-second intervals. Stir between each interval until the chocolate is silky smooth and ready for drizzling.
  • Place your stuffed dates on a lined baking tray and lovingly drizzle the melted chocolate over them, ensuring they’re beautifully coated in that rich chocolate layer.
  • Pop the tray in the refrigerator for 15-20 minutes. This allows the chocolate to set perfectly, giving you a delightful treat to enjoy.
