For the Marinade

  • 1/2 cup Tahini If too thick, whisk in water for better consistency.
  • 2 tablespoons Za’atar Aromatic spice blend.
  • 2 tablespoons Red Wine Vinegar Can substitute with pineapple juice for sweetness.
  • 2 tablespoons Fresh Lemon Juice Brightens flavor.
  • 3 cloves Garlic Freshly minced.
  • 1 teaspoon Salt Adjust to personal preference.
  • 1/2 teaspoon Pepper Add more for heat to taste.

For the Chicken

  • 2 pounds Boneless Skinless Chicken Thighs Main protein for the dish.

For Garnishing

  • 1/4 cup Fresh Parsley For garnish.
  • 2 pieces Lemon Wedges For serving.

How to Make Za’atar Chicken Thighs

  • In a large bowl, mix together tahini, za’atar, red wine vinegar, lemon juice, minced garlic, salt, and pepper until smooth and well combined.
  • Set aside some marinade for drizzling later. Fully coat the boneless chicken thighs in the remaining marinade and refrigerate for at least 1 hour or overnight.
  • Preheat your oven to 400°F (200°C) to prepare for roasting.
  • Line a baking sheet with parchment paper, arrange the marinated chicken, and bake for 25-30 minutes until golden and internal temperature is 165°F (74°C).
  • Drizzle the reserved marinade over the chicken and garnish with fresh parsley and lemon wedges before serving.

Notes

For a complete meal, serve with fluffy couscous or fresh Shirazi salad.
