For the Bites

  • 1 cup Ricotta Cheese Or substitute with cottage cheese for a lighter version.
  • 1 cup Spinach Frozen recommended; ensure well drained.
  • 1/2 cup Parmesan Cheese Can be substituted with nutritional yeast for a dairy-free option.
  • 1 large Egg For vegan version, use 1 tablespoon ground flaxseed mixed with 3 tablespoons water.
  • 2 cloves Garlic (minced) Fresh garlic yields the best flavor.
  • 1 teaspoon Oregano Fresh oregano can be used but adjust the quantity.
  • 1 tablespoon Olive Oil For greasing the muffin tin.

Cooking Instructions

  • Preheat your oven to 375°F (190°C) and grease your mini muffin tin with olive oil.
  • In a large mixing bowl, combine ricotta, drained spinach, Parmesan, egg, minced garlic, oregano, and a pinch of salt. Blend until creamy.
  • Scoop the mixture into muffin cups about ¾ full.
  • Bake in the preheated oven for 15 minutes. Check for golden edges and set tops; bake longer if necessary.
  • Allow to cool in the pan for 5 minutes before transferring to a serving plate.

Notes

Optional: Serve with marinara or tzatziki for added flavor.
