For the Jam

  • 2 cups Mixed Berries Any combination of strawberries, blueberries, or raspberries
  • 1/4 cup Maple Syrup Can substitute with honey or agave syrup
  • 1/4 cup Chia Seeds Ground chia can be used for a smoother texture
  • 2 tablespoons Lemon Juice Orange juice can be used as an alternative
  • 1 teaspoon Vanilla Extract Almond extract can be a substitute

For Serving

  • 4 slices High-Fiber Toast Choose your favorite variety

Instructions
 

Jam Preparation

  • Place your chosen mixed berries into the Instant Pot. Select the sauté function to gently heat them, cooking for about 3-5 minutes until they become soft and juicy.
  • Using a potato masher or a fork, mash the berries to your desired consistency.
  • Add in the chia seeds, maple syrup, lemon juice, and vanilla extract, stirring well until combined.
  • Secure the lid and set the Instant Pot to manual for 5 minutes. Once done, allow a natural release for about 10 minutes.
  • Carefully remove the lid and let the jam cool down for a few minutes before transferring it to an airtight container.

Serving

  • Serve the jam on high-fiber toast for a delightful breakfast!

Notes

Store in the fridge for up to a week or freeze in small portions for later use.
