  • 1 tablespoon Baking Powder

For the Seasoning

  • 1/4 cup Honey Agave syrup can be used as a substitute.
  • 1/4 cup Fresh Lemon Juice Bottled juice is a safe alternative.
  • 1 tablespoon Lemon Zest Lime zest is a good substitute.
  • 3 cloves Minced Fresh Garlic Can interchange with garlic powder.
  • 4 tablespoons Unsalted Butter Olive oil can replace for a dairy-free option.

For Cooking

Preparation

  • Begin by patting your chicken wings dry, ensuring they're completely moisture-free. In a bowl, mix potato starch, baking powder, garlic powder, onion powder, and paprika together. Toss the wings until they are evenly coated, then let them rest in the refrigerator for at least 30 minutes to ensure they stay crispy.
  • If oven-baking, preheat your oven to 400°F (200°C). Arrange the wings on a parchment-lined baking sheet and bake for 20-25 minutes, flipping halfway, and spraying with oil for crispiness. For air-frying, preheat to 380°F (190°C) and cook for 18-20 minutes, shaking the basket halfway through.
  • While the wings are baking, melt unsalted butter in a sauté pan over medium heat. Add minced garlic and sauté until fragrant, then stir in honey, lemon juice, lemon zest, and a pinch of salt.
  • Allow the sauce to simmer gently for 5-7 minutes on low heat, stirring occasionally. Once thickened, incorporate freshly ground black pepper to taste.
  • In a large bowl, toss the hot wings with three-quarters of the sauce until they are fully coated. Serve immediately with the remaining sauce for dipping.
