  • 2 tablespoons Olive Oil for greasing and crisping tortillas
  • 1 can Black Beans rinsed and drained
  • 1 packet Taco Seasoning homemade or store-bought
  • 1 cup Mild Salsa or medium salsa for more heat
  • 2 tablespoons Lime Juice fresh lime juice
  • 1 cup Mexican Shredded Cheese or dairy-free option
  • 8 pieces Corn Tortillas or flour tortillas if preferred

For the Avocado Lime Crema

  • 1 ripe Avocado for best texture
  • 2 tablespoons Lime Juice fresh lime juice
  • 1/2 cup Sour Cream or plain yogurt

  • Preheat the oven to 450°F and grease a large baking sheet with olive oil.
  • Blend black beans, taco seasoning, mild salsa, and lime juice in a food processor until smooth, about 45 seconds.
  • Warm corn tortillas in the microwave for 1 minute covered with a damp paper towel, then place them in a zippered bag.
  • Assemble tacos by laying a tortilla on the baking sheet, adding a spoonful of the black bean mixture, and topping with cheese before folding.
  • Bake tacos for 8-10 minutes, then flip and bake for an additional 8 minutes until golden brown and crispy.
  • Cool for 2-3 minutes before serving with Avocado Lime Crema and your favorite toppings.

Notes
