This recipe is a wonderful way to use up leftover cooked chicken for a quick and satisfying lunch. From start to finish, you can have these on the table in under an hour, making them a great option for a busy day.

Why will you love Chicken Squares?

Uses crescent roll dough for a flaky, buttery crust without the work of making pastry from scratch.

The creamy filling comes together in minutes with cooked chicken, making it a fast and satisfying meal.

A crushed crouton topping adds a savory crunch that contrasts nicely with the soft filling and tender dough.

Chicken Squares Ingredients

• Cooked Chicken: Rotisserie chicken or any leftover cooked chicken works well. Just be sure to dice it into small, bite-sized pieces.

• Crescent Rolls: You can use a can of classic crescent rolls (just press the seams together to form rectangles) or a solid crescent dough sheet.

• Cream Cheese: Full-fat block cream cheese will provide the richest flavor and creamiest texture. Make sure it’s fully softened for easy mixing.

• Chives: Fresh chives add a mild, fresh onion flavor. Finely chopped green onions or a pinch of onion powder can be used instead.

• Seasoned Croutons: Any flavor of seasoned crouton will work. Garlic and herb or cheese and garlic are both good choices.

Exact quantities are in the recipe card below.

How to Make Chicken Squares

Step 1: Make the Creamy Filling

First, preheat your oven to 350°F (175°C). In a bowl, beat the softened cream cheese and butter until they are smooth and combined. Add the cooked chicken, chives, seasonings, milk, and pimientos if you’re using them, and stir everything together.

Step 2: Assemble the Chicken Squares

Unroll your crescent dough and form four rectangles, pressing any seams together. Spoon the chicken mixture evenly onto the center of each rectangle. Fold the four corners of the dough up over the filling to meet in the middle, then twist and pinch to seal it into a small bundle.

Step 3: Top and Bake

Arrange the squares on a baking sheet. Brush the tops with melted butter and sprinkle the crushed croutons over them. Bake for 25 to 30 minutes, until the pastries are a deep golden brown and the filling is hot.

What to Serve with Chicken Squares

These chicken squares are satisfying on their own or can be served with a simple green salad or a cup of tomato soup for a more complete meal.

Helpful Tricks for Chicken Squares

Food Safety: Always ensure poultry is cooked to a safe internal temperature of 165°F (74°C). Since the chicken is pre-cooked, this ensures it is safely reheated.

A great way to use up leftover rotisserie chicken is to shred or cube it for the filling.

Make sure to pinch the seams of the dough tightly to prevent the creamy filling from leaking out during baking.

Crush the croutons by placing them in a zip-top bag and gently rolling over them with a rolling pin or can.

How to Store and Freeze Chicken Squares

Store leftover chicken squares in an airtight container in the refrigerator for up to 3 days. For best results, reheat in an oven or air fryer at 350°F (175°C) for 5-10 minutes, or until warm and crisp. We do not recommend microwaving, as it will make the pastry soft. You can also freeze baked squares for up to 2 months; reheat from frozen.

Chicken Squares Recipe FAQs

Can I make these ahead of time?

Yes. You can assemble the squares, cover them, and refrigerate for up to 24 hours before baking. You may need to add a few minutes to the baking time. You can also bake them ahead and reheat to serve.

What kind of chicken should I use?

Any cooked chicken works well. This is a great recipe for using leftover roasted or rotisserie chicken. Canned chicken, drained well, is also an option.

Can I freeze chicken squares?

Yes, they freeze well. You can freeze them either baked or unbaked. For unbaked, assemble and freeze on a baking sheet before transferring to a freezer bag. Bake from frozen, adding about 10-15 minutes to the time. For baked, cool completely before freezing and reheat in the oven.
