  • 1 lb baby potatoes
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 3 tbsp freshly squeezed lemon juice

Instructions

  1. Cook baby potatoes in salted boiling water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. While potatoes cool, rinse and chop parsley and dill.
  3. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  4. In a large mixing bowl, combine cooled potatoes with chopped herbs.
  5. Pour the dressing over the potato mixture and gently toss to coat.
  6. Chill in the refrigerator for at least one hour before serving.
