Ingredients

Scale
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/2 teaspoon salt
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until it runs clear to remove excess starch.
  2. In a medium saucepan, bring rinsed rice, water, and salt to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until all water is absorbed.
  3. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  4. In a separate bowl, mix lime juice and chopped cilantro; fold into the fluffy rice until evenly distributed.
  5. Taste and adjust seasoning if necessary before serving.
