  • 1 cup canned kidney beans, rinsed and drained
  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper (any color), diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Blanch the green beans in boiling water for about 2 minutes until tender-crisp. Drain and cool.
  2. In a mixing bowl, combine green beans, kidney beans, chickpeas, red onion, bell pepper, and cherry tomatoes.
  3. In another bowl, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until emulsified.
  4. Pour the dressing over the salad mixture and gently toss to coat all ingredients.
  5. Refrigerate for at least one hour before serving to allow flavors to meld.
