  • 2 medium Yukon Gold potatoes, diced
  • 1 cup carrots, diced

  • 4 cups low-sodium vegetable broth

  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  3. Add rinsed lentils, thyme, and bay leaves; stir well.

  5. After about 10 minutes, add diced potatoes. Simmer until lentils are tender and potatoes are soft (about 20 minutes).
  6. Remove bay leaves, season with salt and pepper, and serve hot.
