  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1/4 cup red onion (diced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a pot, combine the rinsed quinoa with water or broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy. Allow to cool.
  2. While the quinoa cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  3. Finely chop the parsley and mint.
  4. In a large bowl, combine the cooled quinoa with chopped vegetables, herbs, and crumbled feta.
  5. Drizzle with olive oil and lemon juice; season with salt and pepper. Gently mix until everything is well combined.
  6. Serve chilled or at room temperature.
