- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (diced)
- 1/4 cup red onion (diced)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup fresh mint (chopped)
- 1/2 cup crumbled feta cheese
- 3 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice

Instructions
- Rinse the quinoa under cold water. In a pot, combine the rinsed quinoa with water or broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy. Allow to cool.
- While the quinoa cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
- Finely chop the parsley and mint.
- In a large bowl, combine the cooled quinoa with chopped vegetables, herbs, and crumbled feta.
- Drizzle with olive oil and lemon juice; season with salt and pepper. Gently mix until everything is well combined.
