  • 1 lb ground beef (80/20 blend)
  • 1/2 lb pork sausage
  • 3/4 cup fresh breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil (for cooking)
  • 2 oz bone marrow (from fresh marrow bones)
  • 2 cups low-sodium beef broth
  • 3 tbsp lingonberry jam

Instructions

  1. In a large bowl, combine ground beef, pork sausage, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix until just combined.
  2. Roll the mixture into golf ball-sized meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides (6-8 minutes). Transfer to a plate.
  4. In the same skillet, melt the bone marrow and add flour; stir until golden brown (2-3 minutes). Gradually whisk in beef broth and simmer. Stir in lingonberry jam.
  5. Return meatballs to the skillet and simmer in gravy for 10-15 minutes until heated through.
  6. Serve hot with creamy mashed potatoes or bread.
