- 2 lbs beef chuck roast, cut into bite-sized cubes
- 1 cup red wine (preferably Cabernet Sauvignon)
- 3 medium carrots, chopped
- 8 oz cremini mushrooms, sliced
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 3 cups low-sodium beef broth
- 2 tbsp flour
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 2 tbsp olive oil
- Salt and pepper to taste
- 8 oz egg noodles
Instructions
- Season the beef with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef in batches until golden (5-7 minutes). Remove from the pot.
- In the same pot, sauté onions, carrots, and mushrooms for about 5 minutes until softened. Add garlic and cook for another minute.
- Sprinkle flour over vegetables and stir well. Pour in red wine, scraping up any browned bits from the bottom. Add beef broth and thyme.
- Return browned beef to the pot and bring to a simmer. Cover and reduce heat; let it cook slowly for 2 hours until meat is tender.
- While simmering, cook egg noodles according to package instructions; drain well.
- Serve the bourguignon over noodles and drizzle with sauce.
