- 8 oz egg noodles
- 1 cup dry red wine
- 2 medium carrots, chopped
- 8 oz cremini mushrooms, sliced
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 sprigs fresh thyme or 1 tsp dried thyme
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sear the beef in olive oil over medium-high heat until browned on all sides; remove from pot.
- In the same pot, sauté onions, carrots, and mushrooms for about 5 minutes until softened.
- Add minced garlic and stir for one minute until fragrant.
- Deglaze with red wine, scraping up any bits stuck to the pot; simmer for 2 minutes.
- Return beef to the pot along with beef broth, thyme, bay leaves, salt, and pepper; bring to a boil then reduce heat to low. Simmer for at least 2 hours.
- Cook egg noodles according to package instructions; drain.
- Serve noodles topped with the beef bourguignon and garnish with parsley if desired.
