  • 2 tbsp olive oil
  • 1 cup andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups seafood stock
  • 1 lb shrimp, peeled and deveined
  • 1 cup crawfish (optional)
  • 2 tbsp Cajun seasoning

Instructions

  1. Prepare your ingredients by chopping the onion, bell pepper, celery, and garlic.
  2. In a large pot over medium heat, heat olive oil. Add onions, bell peppers, celery, and garlic; sauté until softened (about 5 minutes).
  3. Add sliced andouille sausage; cook until browned.
  4. Stir in diced tomatoes and seafood stock; bring to a boil then reduce heat to simmer.
  5. After about 20 minutes of simmering, add shrimp and crawfish if using; cook until shrimp are pink (about 5 minutes).
  6. Season with Cajun seasoning to taste. Serve hot garnished with parsley or green onions.
