  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick cooking spray. Pat the chicken breasts dry and season generously with salt and pepper.
  3. In a bowl, whisk together lemon juice, olive oil, garlic, rosemary, and thyme.
  4. Place the chicken in a ziplock bag or shallow dish; pour the marinade over it and let marinate in the fridge for at least 30 minutes.
  5. Transfer marinated chicken to the baking dish, drizzle with any leftover marinade, and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  6. Let rest for five minutes before slicing and serving.
