Description

Coconut Potato Salad is a vibrant and refreshing side dish that brings a tropical flair to any meal. Creamy Yukon Gold potatoes are combined with rich coconut milk, zesty lime juice, and fresh herbs, creating an explosion of flavors that will impress your guests. Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1 cup full-fat coconut milk
  • 2 tbsp freshly squeezed lime juice
  • ½ red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • Salt & pepper to taste

Instructions

  1. Wash the Yukon Gold potatoes thoroughly and cut them into bite-sized pieces. Place in a large pot filled with water and bring to a boil.
  2. Add a pinch of salt to the boiling water. Reduce heat and simmer for 15-20 minutes until fork-tender but not mushy. Drain and let cool.
  3. In a mixing bowl, whisk together the coconut milk, lime juice, salt, and pepper until smooth.
  4. In a large bowl, combine the cooled potatoes with red onion and cilantro. Pour the dressing over and gently toss to coat.
  5. Cover and chill in the refrigerator for at least one hour before serving.
