Ingredients

  • 2 lbs pork ribs (baby back or spare)
  • 1 jar (32 oz) sauerkraut, drained
  • 1 medium onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp caraway seeds
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the pork ribs generously with salt and pepper on both sides.
  3. In a large skillet over medium heat, sauté sliced onions until translucent (about 5 minutes).
  4. In a roasting pan, layer sautéed onions at the bottom, followed by seasoned ribs on top. Add sauerkraut and drizzle apple cider vinegar over everything.
  5. Sprinkle brown sugar and caraway seeds on top.
  6. Cover the pan tightly with foil and bake for about 3 hours. Remove foil in the last 30 minutes for added texture.
  7. Serve hot, drizzled with pan juices.
