  • 4 medium bell peppers (orange, yellow, or green)
  • 1 pound ground turkey or beef
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: spices such as cumin or paprika

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Prepare the bell peppers by cutting off the tops and removing seeds.
  3. In a skillet over medium heat, sauté diced onion and minced garlic until softened. Add ground meat and cook until browned.
  4. Stir in cooked rice and diced tomatoes; season with salt, pepper, and optional spices.
  5. Stuff each pepper with the filling mixture and place upright in the baking dish.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil, sprinkle cheese on top of each pepper, then bake for an additional 10-15 minutes until cheese is melted and bubbly.
