- 1 pound ground turkey or beef
- 1 cup cooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste

Instructions
- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Prepare the bell peppers by cutting off the tops and removing seeds.
- In a skillet over medium heat, sauté diced onion and minced garlic until softened. Add ground meat and cook until browned.
