  • 1 cup buttermilk
  • ½ cup vegetable oil

  • 1 tsp vanilla extract
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 tsp peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and sugar.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, food coloring, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fill cupcake liners two-thirds full and bake for about 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For the frosting, beat softened butter and powdered sugar until creamy. Add peppermint extract and milk to reach desired consistency before frosting cooled cupcakes.
