This dish comes together in just over an hour and is quite straightforward to prepare. It’s a wonderful way to transform a simple package of chicken wings into a hearty and satisfying main course, perfect for a family lunch or dinner.

Why will you love Oven-Baked Smothered Chicken Wings?

Searing the chicken first creates a flavorful crust and renders some of the fat, which adds richness to the final gravy.

Making a simple gravy from scratch in the same pan you cooked the chicken in captures all the browned, flavorful bits for a deeper taste.

Finishing the dish in the oven allows the chicken to cook gently and evenly, ensuring it becomes tender while the gravy thickens around it.

Oven-Baked Smothered Chicken Wings Ingredients

• Chicken Wings: Using wings that are already split into drumettes and flats makes them easier to sear and serve.

• Chicken Broth: Low-sodium chicken broth is a good choice because it allows you to control the final saltiness of the gravy.

• Bell Pepper: While green bell pepper provides a classic, slightly savory flavor, you could use red or yellow bell pepper for a bit of sweetness.

• Oil: A neutral oil with a high smoke point, such as vegetable, canola, or grapeseed oil, is ideal for searing the chicken.

Exact quantities are in the recipe card below.

How to Make Oven-Baked Smothered Chicken Wings

Step 1: Season and Sear the Chicken

First, pat your chicken wings completely dry and toss them with oil and seasonings. Sear the wings in a hot skillet until they are golden brown on both sides. This step builds flavor. Once browned, move the wings to a 9×13-inch baking dish.

Step 2: Sauté the Vegetables

In the same skillet, cook the chopped onion and bell pepper until they soften. As they cook, scrape the bottom of the pan to lift any flavorful browned bits left from the chicken. Add the cooked vegetables to the baking dish.

Step 3: Make the Savory Gravy

Create a simple roux in the skillet by mixing flour and oil. Gradually whisk in the chicken broth until smooth, then let it simmer and thicken. This homemade gravy is the key to the dish.

Step 4: Bake to Finish

Pour the prepared gravy over the chicken and vegetables in the baking dish. Bake everything together until the chicken is tender and fully cooked and the gravy is bubbly. Let it rest for a moment before serving.

What to Serve with Oven-Baked Smothered Chicken Wings

Helpful Tricks for Oven-Baked Smothered Chicken Wings

Food Safety: Always cook poultry to a safe minimum internal temperature of 165°F (74°C).

For a thicker gravy, you can reduce the chicken broth to 1 ½ cups (360 ml) or let the gravy simmer for a few extra minutes on the stovetop before pouring it over the chicken.

Patting the chicken wings very dry with paper towels is an important step. It helps them brown nicely instead of steaming in the pan.

Using a skillet that can go from stovetop to oven can simplify cleanup. If you have one that’s large enough, you can sear the chicken, cook the vegetables, make the gravy, and bake all in the same pan.

How to Store and Freeze Oven-Baked Smothered Chicken Wings

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan over low heat or in the microwave. Freezing is not recommended as the gravy’s texture may change upon thawing.

Oven-Baked Smothered Chicken Wings Recipe FAQs

Can I use boneless chicken instead of wings?

Yes, boneless, skinless chicken thighs would work well. Cut them into 2-inch pieces, sear them as directed, and reduce the final baking time to about 25-30 minutes, or until cooked through.

Do I have to sear the chicken first?

Searing is highly recommended as it adds significant flavor and a better texture to the chicken and the gravy. If you skip this step, the final dish will be less flavorful.

Can I make this dish spicier?

Certainly. You can increase the amount of cayenne pepper in the seasoning blend. You could also add a pinch of red pepper flakes or a few dashes of hot sauce to the gravy as it simmers.

Ingredients

  • 2 lbs chicken wings split into flats and drumettes, about 900g
  • 4 tbsp vegetable oil divided, 60ml
  • 1 tsp salt 6g
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp garlic powder
  • 1 tsp dried thyme
  • 3/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 medium green bell pepper chopped
  • 1 small yellow onion chopped
  • 3 tbsp all-purpose flour 24g
  • 2 cups chicken broth 480ml

Instructions

  • Preheat your oven to 375°F (190°C). Pat the chicken wings completely dry with paper towels. In a large bowl, toss the wings with 2 tablespoons of vegetable oil, salt, pepper, garlic powder, thyme, paprika, and cayenne pepper until they are evenly coated.
  • Heat a large skillet or Dutch oven over medium-high heat. Add the seasoned wings in a single layer, being careful not to crowd the pan (work in batches if necessary). Sear for 3-5 minutes per side, until golden brown. Transfer the browned wings to a 9x13-inch baking dish.
  • Reduce the skillet heat to medium. Add the chopped onion and bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft. Scrape up any browned bits from the bottom of the pan as they cook.
  • Transfer the cooked vegetables to the baking dish with the chicken wings.
  • Return the skillet to medium heat. Add the remaining 2 tablespoons of oil and the flour. Whisk constantly for about 1 minute to cook the flour and form a smooth paste (a roux).
  • Slowly pour in the chicken broth while whisking continuously to avoid lumps. Bring the gravy to a simmer and cook for 2-3 minutes, until it has slightly thickened. Taste and adjust seasoning with more salt or pepper if desired.
  • Pour the gravy evenly over the chicken and vegetables in the baking dish. Stir gently to make sure everything is coated.
  • Bake for 45 minutes, or until the chicken is tender and cooked through. The internal temperature of the chicken should read at least 165°F (74°C) on an instant-read thermometer. Let the dish rest for a few minutes before serving.
