  • 8 oz halloumi cheese, sliced into ½-inch pieces
  • 2 cups butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • 1 cup carrots, sliced
  • 3 tbsp olive oil
  • 2 tbsp za’atar spice blend
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash, Brussels sprouts, and carrots with olive oil, za’atar, salt, and pepper until well-coated.
  3. Spread the seasoned vegetables evenly on a parchment-lined baking sheet.
  4. Roast for 25-30 minutes, stirring halfway through for even cooking.
  5. After about 20 minutes of roasting, add halloumi slices on top of the veggies and return to the oven for an additional 10-15 minutes until golden brown.
  6. Drizzle with fresh lemon juice before serving.
