Ingredients

Scale
  • 2 lbs beef chuck roast, cut into cubes
  • 4 marrow bones
  • 1 cup full-bodied red wine (e.g., Burgundy)
  • 8 oz cremini mushrooms, sliced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 cups low-sodium beef broth
  • 3 medium carrots, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season beef cubes with salt and pepper. Heat olive oil in a skillet over medium-high heat; sear beef until browned on all sides.
  2. Add chopped onions and carrots to the skillet; sauté for about 5 minutes.
  3. Pour in red wine and deglaze the pan, scraping up brown bits; simmer for two minutes.
  4. Transfer beef mixture to the slow cooker. Add mushrooms, garlic, bone marrow, thyme, bay leaves, and beef broth. Stir gently.
  5. Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
  6. Serve hot, drizzled with additional bone marrow butter if desired.
