Description

  • 2 cups pumpkin, cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 4 cups fresh spinach
  • ½ cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss pumpkin cubes, chickpeas, olive oil, maple syrup, cinnamon, salt, and pepper until well coated.
  3. Spread the mixture on the prepared baking sheet and roast for 25-30 minutes until tender and golden.
  4. In a serving bowl, layer fresh spinach as the base. Once cooled slightly, add the roasted mixture and top with crumbled feta.
  5. Serve warm or at room temperature with an extra drizzle of olive oil if desired.
