- 2 lbs Yukon Gold potatoes, quartered

- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Wash and quarter the Yukon Gold potatoes.
- In a bowl, mix salt, pepper, garlic powder, oregano, and paprika. Coat the chicken breasts in the spice mixture.
- Set the Instant Pot to 'Sauté.' Heat olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
- Add the quartered potatoes around the chicken in the pot.
- Pour in the chicken broth without stirring.
- Secure the lid and set to 'Pressure Cook' for 10 minutes. Allow natural pressure release for a few minutes before quick releasing any remaining pressure.
