- 4 medium bell peppers (red, yellow, or green)
- 1 lb lean ground chicken
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 cup tomato sauce
- 1 cup cooked rice (white or brown)
- 1 cup shredded mozzarella or cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- Cut the tops off the bell peppers and remove the seeds. Place them upright in the baking dish.
- In a skillet over medium heat, sauté chopped onions and minced garlic until soft. Add ground chicken and cook until browned. Season with salt, pepper, and any preferred spices.
- Stir in cooked rice and tomato sauce; simmer for about 5 minutes.
- Stuff each pepper with the chicken mixture until full.
- Cover with foil and bake for 30 minutes. In the last 5 minutes, remove foil and sprinkle cheese on top to melt.
