  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 2 cups Brussels sprouts, halved
  • 2 medium carrots, sliced thinly
  • 1 medium red onion, diced
  • 1/2 cup high-quality balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing, chopping Brussels sprouts in half, slicing carrots thinly, dicing red onion, and mincing garlic.
  2. Pat chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown.
  4. Add Brussels sprouts, carrots, red onion, and garlic to the skillet. Stir well and sauté for another 5 minutes until vegetables slightly soften.
  5. Drizzle balsamic vinegar over the chicken and vegetables. Lower the heat, cover the skillet, and simmer for about 10 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Serve hot with any remaining glaze drizzled on top.
