- 8 oz sirloin steak, thinly sliced
- 8 oz large shrimp, peeled and deveined
- 4 large flour tortillas
- 1 cup bell peppers, thinly sliced (mixed colors)
- 1/2 medium onion, diced
- 1 cup shredded Monterey Jack cheese
- 2 tbsp Creole seasoning
- 2 tbsp olive oil
Instructions
- Prepare ingredients by slicing the steak and seasoning it with Creole seasoning.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the steak for about 3-4 minutes until browned but juicy. Remove from the pan.
- In the same pan, add another tablespoon of olive oil and sauté onion and bell peppers for 2 minutes. Then add shrimp and cook for an additional 3 minutes until fully cooked.
- On one half of each tortilla, layer cheese, the steak-shrimp mixture, and more cheese before folding over.
- Cook folded quesadillas in the skillet for about 3-4 minutes per side until golden brown.
- Slice into wedges and serve immediately with salsa or guacamole.
