  • 1 lb lean ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup corn (frozen or fresh)
  • 2 tbsp chili powder
  • Salt to taste

Instructions

  1. In a large pot over medium heat, sauté chopped onion and bell pepper until softened (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
  2. Add ground beef to the pot and brown it while breaking it into small pieces.
  3. Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, and beef broth.
  4. Bring to a simmer; reduce heat to low and cook for about 20 minutes.
  5. Taste and adjust seasoning as needed before serving hot with cornbread or tortilla chips.
