- 1 can (14.5 oz) diced tomatoes with green chilies

- 1 bell pepper (any color), chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 cup corn (frozen or fresh)
- 2 tbsp chili powder
- Salt to taste
Instructions
- In a large pot over medium heat, sauté chopped onion and bell pepper until softened (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
- Add ground beef to the pot and brown it while breaking it into small pieces.
