  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in boiling salted water until al dente. Drain and rinse under cold water to cool.
  2. While the orzo cools, chop the cherry tomatoes, cucumber, red onion, and parsley.
