Description

  • 1 cup fresh lime juice (about 68 limes)
  • 2 inches fresh ginger root, grated
  • 1 cup granulated sugar
  • 4 cups filtered water

Instructions

  1. Juice the limes until you have one cup of lime juice, using a citrus juicer if available.
  2. Grate the ginger root finely using a microplane grater.
  3. In a saucepan over medium heat, combine sugar and one cup of water; stir until dissolved.
  4. Add grated ginger to the saucepan and simmer for five minutes to infuse flavor.
  5. Remove from heat, strain out ginger pieces, then mix in lime juice and three cups of cold water.
  6. Chill in the refrigerator for at least one hour before serving over ice with optional garnishes like mint leaves.
