Ingredients

Scale
  • 2 cups sliced cucumbers (about 2 medium cucumbers)
  • 1 cup sliced radishes (about 8 radishes)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh dill or parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar (or lemon juice)
  • Salt and pepper to taste

Instructions

  1. Wash and thinly slice the cucumbers and radishes into uniform pieces.
  2. Thinly slice the red onion; soak in cold water for 10 minutes if desired to reduce acidity.
  3. Roughly chop the fresh herbs (dill or parsley).
  4. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper until well combined.
  5. In a large bowl, toss together the cucumbers, radishes, red onion, and herbs. Drizzle the dressing over the salad and gently mix until evenly coated.
  6. Chill in the refrigerator for at least 15 minutes before serving to enhance flavors.
