Ingredients

  • 4 cups kale, chopped
  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tbsp extra virgin olive oil, divided
  • ¼ cup freshly grated Parmesan cheese (or vegan alternative)
  • ⅓ cup Caesar dressing
  • Salt and pepper to taste
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with 1 tablespoon of olive oil, salt, pepper, and smoked paprika. Spread on one side of the prepared baking sheet.
  3. Pat chickpeas dry and mix with remaining olive oil, garlic powder, and salt. Spread on the other side of the baking sheet.
  4. Roast both sweet potatoes and chickpeas for 20-25 minutes until tender and crispy, shaking the pan halfway through.
  5. In a large bowl, massage kale with a little olive oil until softened. Add roasted sweet potatoes and chickpeas.
  6. Drizzle with Caesar dressing, toss gently to combine, and serve immediately topped with Parmesan cheese.
