  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Generously season the chicken breasts with salt and pepper on both sides.
  3. In a large skillet over medium-high heat, melt 2 tbsp of butter. Sear the chicken for 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add another tbsp of butter and sauté minced garlic for about one minute until fragrant.
  5. Pour in chicken broth and heavy cream; stir well. Add thyme and let simmer for about five minutes until slightly thickened.
  6. Return the chicken to the skillet, spoon sauce over it, and simmer for another couple of minutes before serving.
