- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 cup low-sodium chicken broth
- ½ cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Generously season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium-high heat, melt 2 tbsp of butter. Sear the chicken for 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add another tbsp of butter and sauté minced garlic for about one minute until fragrant.
- Pour in chicken broth and heavy cream; stir well. Add thyme and let simmer for about five minutes until slightly thickened.
- Return the chicken to the skillet, spoon sauce over it, and simmer for another couple of minutes before serving.
