Ingredients
- 3 medium zucchinis
- 4 cups fresh baby spinach
- 1 cup raw cashews (soaked)
- 1 tablespoon Italian seasoning
- 2 cups marinara sauce
- 1/4 cup nutritional yeast
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips (about 1/8 inch thick).
- In a skillet, sauté spinach in olive oil over medium heat until wilted (about 3 minutes). Let cool.
- Blend soaked cashews, sautéed spinach, Italian seasoning, salt, and pepper in a food processor until smooth.
- Lay zucchini strips flat and place one tablespoon of the cashew filling at one end. Roll them up and place seam-side down in a baking dish.
- Cover the bottom of the baking dish with marinara sauce, arrange rollatini, drizzle remaining sauce on top, and sprinkle with nutritional yeast.
